
Baked Plantain Chips with Guacamole
Crispy baked plantain chips served with a creamy guacamole, perfect for a light and healthy lunch.

- 2 pieces green plantains
- 2 pieces avocado
- 1 piece lime
- 1 cup cilantro
- 1 teaspoon salt
- 1 clove garlic
- 2 tablespoons olive oil
- 1 teaspoon black pepper
- 1 piece jalapeño (optional)

Preheat your oven to 425°F (220°C).

Peel the green plantains and slice them thinly (about 1/8 inch thick) using a sharp knife or a mandoline.

In a large bowl, toss the sliced plantains with 2 tablespoons of olive oil, 1 teaspoon of salt, and 1 teaspoon of black pepper until evenly coated.

Spread the plantain slices in a single layer on a baking sheet lined with parchment paper. Bake in the preheated oven for 15-20 minutes, flipping halfway through, until they are golden and crispy.

While the plantains are baking, prepare the guacamole. In a medium bowl, mash the 2 avocados with a fork until smooth.

Add the juice of 1 lime, 1 minced garlic clove, 1 cup of chopped cilantro, and if desired, 1 finely chopped jalapeño. Mix until well combined.

Taste the guacamole and add additional salt or lime juice as needed.

Once the plantain chips are done baking, remove them from the oven and let them cool slightly.
