
Baked Cod with Tomato and Herb Crust
Tender cod fillets baked with a crunchy herb and tomato topping, representing the freshness of Irish seafood.
Ingredients
- 4 pieces cod fillets
- 2 medium tomatoes
- 1 cup bread crumbs
- 1 cup parsley
- 3 tablespoons olive oil
- 1 medium lemon
- 2 cloves garlic
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon paprika

Preheat your oven to 400°F (200°C).

In a mixing bowl, combine 1 cup of bread crumbs, 1 cup of finely chopped parsley, 2 minced garlic cloves, 1 teaspoon of salt, 1 teaspoon of black pepper, and 1 teaspoon of paprika.

Dice the 2 medium tomatoes and add them to the breadcrumb mixture.

Drizzle 3 tablespoons of olive oil over the breadcrumb mixture and stir until well combined.

Place the 4 pieces of cod fillets onto a greased baking sheet.

Squeeze the juice of 1 medium lemon over the cod fillets and season with additional salt and pepper to taste.

Evenly distribute the breadcrumb and tomato mixture over the top of each cod fillet, pressing gently to adhere.

Bake in the preheated oven for 15-20 minutes, or until the cod is cooked through and flakes easily with a fork.
