Baked Cauliflower Fritters with Marinara Sauce
Crispy baked fritters made with cauliflower and herbs, served with a side of marinara sauce for dipping.
Ingredients
- 1 head cauliflower
- 1 cup chickpea flour
- 1 cup fresh parsley
- 1 4 nutritional yeast
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 tablespoons olive oil
- 2 cups marinara sauce
- 1 cup water
- 1 teaspoon red pepper flakes

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Cut the cauliflower into florets and steam them for about 8-10 minutes until tender. Drain and let cool.

In a large mixing bowl, mash the steamed cauliflower with a fork or potato masher until mostly smooth with some small chunks.

Add the chickpea flour, chopped parsley, nutritional yeast, garlic powder, onion powder, salt, black pepper, and red pepper flakes to the mashed cauliflower. Mix well until combined.

Gradually add water to the mixture until it reaches a thick batter consistency. You may not need the entire cup.

Using a tablespoon, scoop the mixture and form small patties. Place them on the prepared baking sheet, leaving space between each fritter.

Drizzle the tops of the fritters with olive oil and bake in the preheated oven for 25-30 minutes, flipping halfway through, until golden brown and crispy.

While the fritters are baking, heat the marinara sauce in a small saucepan over medium heat until warm.

Once the fritters are done, remove them from the oven and let them cool slightly before serving.

Serve the fritters warm with marinara sauce on the side for dipping.
