Instructions
- 1
Preheat your oven to 350°F (175°C).
- 2
Wash and core the apples, creating a hollow center for the filling. Leave the bottoms intact to hold the filling.
- 3
In a mixing bowl, combine the rolled oats, cinnamon, nutmeg, chopped walnuts, raisins, maple syrup, vanilla extract, and a pinch of salt. Mix until well combined.
- 4
Stuff each cored apple with the oat mixture, pressing down gently to pack it in.
- 5
Place the stuffed apples in a baking dish and pour 1 cup of water into the bottom of the dish to create steam while baking.
- 6
Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
- 7
After 25 minutes, remove the foil and bake for an additional 15 minutes, or until the apples are tender and the topping is golden brown.
- 8
Remove from the oven and let cool for a few minutes before serving.
- 9
Serve warm, drizzled with additional maple syrup if desired.
