Ingredients

  • 2 cups rolled oats
  • 2 medium apples
  • 1 teaspoon cinnamon
  • 1 cup nuts (mixed or walnuts)
  • 1 third cup maple syrup
  • 1 cup non-dairy milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1 pinch salt
  • 1 tablespoon coconut oil
  • 1 third cup raisins

    Preheat your oven to 350°F (175°C).

    In a large mixing bowl, combine 2 cups of rolled oats, 1 teaspoon of cinnamon, 1 teaspoon of baking powder, and a pinch of salt. Mix well.

    Core and chop the 2 medium apples into small pieces, then add them to the dry mixture.

    Add 1 cup of mixed nuts (or walnuts), 1/3 cup of raisins, 1/3 cup of maple syrup, 1 cup of non-dairy milk, 1 teaspoon of vanilla extract, and 1 tablespoon of melted coconut oil to the bowl. Stir until all ingredients are well combined.

    Grease a muffin tin with non-stick spray or a little coconut oil. Pour the oatmeal mixture evenly into the muffin cups, filling each about 3/4 full.

    Bake in the preheated oven for 25-30 minutes, or until the tops are golden brown and a toothpick inserted in the center comes out clean.

    Remove the muffin tin from the oven and let the oatmeal cups cool for about 10 minutes before gently removing them from the tin.
