
Bajan Macaroni Pie
A savory baked macaroni pie with cheese and spices, a beloved dish from Barbados perfect for lunch.
Ingredients
- 1 pound macaroni
- 2 cups cheddar cheese
- 1 cup milk
- 3 large eggs
- 1 medium onion
- 1 teaspoon black pepper
- 1 teaspoon salt
- 1 teaspoon mustard powder
- 2 tablespoons butter
- 1 teaspoon paprika
- 1 medium green bell pepper
- 2 stalks scallions

Preheat your oven to 350°F (175°C).

Bring a large pot of salted water to a boil. Add the macaroni and cook according to package instructions until al dente, usually about 8-10 minutes. Drain and set aside.

In a medium skillet, melt 2 tablespoons of butter over medium heat. Add the chopped onion and green bell pepper, and sauté until softened, about 5 minutes.

In a large mixing bowl, whisk together the eggs, milk, salt, black pepper, mustard powder, and paprika until well combined.

Add the cooked macaroni, sautéed onion and bell pepper, and 1.5 cups of shredded cheddar cheese to the egg mixture. Stir until everything is evenly coated.

Pour the macaroni mixture into a greased 9x13 inch baking dish. Sprinkle the remaining 0.5 cup of cheddar cheese on top.

Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and the pie is set in the middle.

Remove from the oven and let it cool for about 10 minutes before slicing. Garnish with chopped scallions if desired.
