
Albondigas en Salsa
Spanish meatballs simmered in a rich tomato sauce, often served with crusty bread.
Ingredients
- 1 lb ground beef
- 1 cup bread crumbs
- 1 egg
- 3 cloves garlic
- 1 tablespoon parsley
- 1 small onion
- 2 cups tomato sauce
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon cumin
- 1 bay leaf

Preheat your oven to 400°F (200°C).

In a large bowl, combine 1 lb of ground beef, 1 cup of bread crumbs, 1 beaten egg, 3 minced garlic cloves, 1 tablespoon of chopped parsley, 1 teaspoon of salt, 1 teaspoon of black pepper, and 1 teaspoon of cumin.

Mix the ingredients thoroughly until well combined.

Form the mixture into 1-inch meatballs and place them on a baking sheet.

Bake the meatballs in the preheated oven for 20 minutes, or until browned and cooked through.

While the meatballs are baking, heat 2 tablespoons of olive oil in a large skillet over medium heat.

Chop 1 small onion and add it to the skillet. Sauté for 5 minutes until the onion is translucent.

Add 2 cups of tomato sauce and 1 bay leaf to the skillet. Stir well and bring the sauce to a simmer.

Once the meatballs are cooked, carefully transfer them to the skillet with the sauce.
